About the style. Hops only balance or support the malt. The malt character can range from dry and cereal to rich, toasty and caramel, but never has a roasty or, most importantly, peat-smoky character. Traditionally the darkest of the Scottish ales, sometimes almost black, but lacking any burnt, overtly roasted character.
