This is a loose, 4% drinking beer, based on the fruity esters of Kölsch yeast. This is built on the inimitable aroma of freshly picked elderflower, rounded out by the citrusy, grassy flavour of Cashmere hops. And a little Melanoidin malt ensures that this 4% beer doesn't come across as too hollow, but remains eminently drinkable with a suitably low final specific gravity. Like drinking Grandma's elderberry syrup :)

Malt:
3.5kg Viking Pilsner malt
200g Viking Cooky malt
250g fresh elderflower (you need to get this)
Add the elderflower at the very end of the boiling and stir for 1-2 minutes. Then cover with a lid and leave to stand for 20 minutes. Then you can start cooling the wort.
Hops (+ boiling time):
50g Cashmere hops - 10min
Yeast:
1pc Lallemand Köln yeast
