The style emerged in Bavaria in the early 1500s. According to the German Reinheitsgebot, beer can only be made from a mixture of water + malted barley + hops and yeast. But this beer is so delicious that an exception was made to the law, and wheat was allowed because of this beer style. It must contain at least 51% wheat malt. Sodium chloride is also an important ingredient. The high sodium content is what makes this beer so drinkable, and the chloride helps the beer go down smoother.
