DC310 is a double roasted oak chip at 310 degrees Celsius. It is used to enhance sweetness and character. It has a lingering aftertaste in the mouth. Expected effect: contributes to the development of quality aromas (furans, phenol aldehydes, volatile phenols, octolactones)
In general, the more heavily roasted the wood, the stronger the aromas released. Strong flavours are only recommended where the character of the beer can handle it.
- furans -> almond notes
- phenol aldehydes -> vanilla notes
- octolactones -> coconut notes
