Oak chips
By using oak chips, you can give your beer the character of a barrel-aged beer. What's more, you can do this in a matter of days - instead of years, thanks to the high specific surface area provided by oak chips.
The chips can be soaked in alcohol, e.g. rum, whisky, if you want to reproduce the character of a particular alcoholic cask.
Or you can simply add it raw to the beer, in which case only the wood's own character will soak into the beer.
Before use, it's a good idea to bake the oak chips in a 180 degree oven for 10 minutes to remove any wild yeasts and bacteria from the surface. This is not necessary for alcohol soaking.
