Sourprise lactose! Ha ha, you had no idea, but you're done for. Suddenly you're surprised by this little surprise, and soon you realise the bittersweet reality: it's nothing more than the acerbic humour of your lactobacillus friend. It's pleasant, refreshing and an indispensable part of the summer mood. Gift or curse? Its up to you, friend!
As the name suggests, lactobacillus brevis is not a brewer's yeast. Its high acid tolerance and acid production capacity can give beer a pleasantly sour character. A lower hop content is recommended (<10 IBU) because it slows fermentation and affects the viability of the bacteria.
