In the spring, towards the end of May, you can admire the elderberry bushes along most roads. And after a good rainfall, the flowers suddenly bloom even more 1-2 days later. This is the time to pick the elderflowers, because this is when they contain the most pollen, which is responsible for their aromas and fragrances.
If you've already brewed our Elderflower Kölsch recipe and are looking for something a little more extreme, look no further This beer has the bitterness of an IPA, the slightly worty character of Windsor yeast, the fresh, spring aromas of elderberries and the slightly fruity, spicy and herbal notes of German hops.

Malt:
5kg Viking Pilsner malt
500g Viknig Münich Light malt
200g fresh elderflower - You have to get it! Try to remove the flowers from the thick green stems as much as possible, as they add bitterness to the beer. Add the elderflowers in the last 1 minute of boiling, then add the hops after the boil is over and stir gently for 1 minute. Then cover with a lid and leave to stand for 10 minutes. Then you can start cooling the wort.

10g Perle hops - 60min
10g Tettnanger hops - 30min
30g Perle hops - Whirlpool, 99C, 10min
30g Tettnanger hops - Whirlpool, 99C, 10min
60g Perle hops - Cold hops, 2 days
60g Tettnanger hops - Cold hops, 2 days
